Irish Salmon with Lemon and Dill

Ingredients:

  • 4 salmon fillets (around 6 oz each)
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1/2 lemon, sliced
  • 1 bunch fresh dill, chopped
  • 1 bunch radishes, trimmed and halved
  • 4 carrots, peeled and roughly chopped
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp chopped fresh parsley

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Drizzle salmon fillets with olive oil, season with salt and pepper, and top with lemon slices and dill. Arrange in a baking dish.
  3. Toss radishes and carrots with honey, Dijon mustard, and a pinch of salt and pepper. Spread around the salmon in the baking dish.
  4. Bake for 15-20 minutes, or until salmon is cooked through and vegetables are tender-crisp.
  5. Garnish with fresh parsley before serving.
